TOMATO PASTE: Sweet Teriyaki Chicken

DINNER RECIPE:
Sweet Teriyaki Chicken


I like this recipe because not only is it delicious, but it uses a lot of my food storage items which really helps with rotation. This recipe makes a lot of sauce so save some to use as a marinade later. I also love that this recipe works well in a slow cooker.

Makes 4 servings
Cook Time: 5 ½ hours, includes slow cooker time
Ingredients:

2 chicken breasts
1 tablespoon vegetable oil
Salt
Pepper
1 cup honey
½ cup soy sauce
½ cup diced onion
¼ cup tomato paste
2 teaspoons minced garlic
¼ teaspoon crushed red pepper
2 tablespoons brown sugar
1 tablespoon lemon juice
Cooked rice

Directions:

Rub the oil all over the chicken, then salt and pepper well. Place chicken into a slow cooker. Cook chicken for 2-3 hours on low.

Combine remaining ingredients in a bowl. After the chicken has cooked for two hours, pour sauce over chicken and cook in the slow cooker for an additional 3 hours.

When the chicken is finished cooking, pull it out of the sauce and shred it. Place shredded chicken over cooked rice and top with teriyaki sauce.
