DINNER RECIPE:
Italian Dressing Pasta Salad


This is my “go to” summer time meal for two reasons. First, it tastes great cold. Letting the pasta salad sit in the fridge all day or overnight allows the ingredients to really take up the Italian flavoring. Second, it is a great way to use up left over pasta and veggies. Almost any veggie works well in this salad. Some of our favorites are zucchini, tomatoes, and asparagus.

Makes 4 servings
Cook Time: 20 minutes
Ingredients:
2 cups cooked pasta, we like to use rotini, but any type would work
1 packet Italian dressing dry mix
¼ cup olive oil
¼ cup apple cidar vinegar
¼ cup water
Pinch of sugar
1 cup vegetables, whatever veggies you have on hand will work

Note: for the vegetables, you can leave them raw or blanch them.

Directions:
Combine Italian dressing mix, oil, vinegar, water, and sugar in a bowl. Mix until powder dissolves.

Add pasta and veggies to the bowl with the Italian dressing and mix until everything is evenly coated with the dressing.

The pasta salad is now ready to eat, or chill for a few hours or overnight before serving.

  1. One of the easiest meals I make uses Italian dressing mix...

    4-6 chicken breasts
    3-4 potatoes, diced
    2 cups green beans, broccoli, or vegetable of your choice
    1 cube butter, melted
    1 pack italian dressing mix

    Preheat the oven to 350. Place the chicken breasts in a line down the middle of a 9x13 pan. Put the potatoes on one side of the chicken and the vegetable on the other. Sprinkle the Italian dressing mix over the top and then pour on the melted butter. Top with tin foil and bake for 1 hour.
