PEANUT BUTTER: Peanut Thai Noodles

DINNER RECIPE:
Peanut Thai Noodles


I got this recipe from one of my favorite food blogs, Tasty Tiff. If you haven’t checked it out yet you really need to. I took her recipe and "food storaged" it. The end result was so delicious I can’t wait to make it again! When I make it again I am going to add more red pepper.
It wasn't as spicy as I thought it would be, just very flavorful.

 
Makes: 4 servings
Cook Time: 30 minutes

Ingredients:

8 oz cooked speghetti noodles
1/4 cup vegetable oil
1 teaspoon crushed red pepper, add more or less depending on how spicy you like it
1 large pork chop
1/4 of a green pepper chopped
1/4 of a red onion chopped
1/2 cup broccoli chopped
1/4 cup honey
1/4 cup peanut butter
1/4 cup soy sauce
1 tablespoon lemon juice

Directions:

Cook the noodles according to package directions. Drain the noodles when they are finished cooking, but do not rinse them, then set them aside.

While the noodles are cooking chop the vegetables and slice the pork chop into thin strips.

In a small bowl add the honey, peanut butter, soy sauce, and lemon juice. Mix well and set aside.

In a large sauce pan heat the oil and red pepper on medium high until the pepper becomes very aromatic. Let the pepper simmer for about 1 minute and then remove from heat. Be careful that the pepper doesn’t burn.

Using a fine mesh strainer, pour the oil pepper mixture through the strainer. Save the oil and pour it back into the sauce pan.

Heat up the oil again in the sauce pan and add the vegetables. Cook until the vegetables for 3 to 4 minutes and then add the chicken.

Cook the pork, stirring constantly so the pork cooks evenly, for 3 to 5 minutes or until fully cooked.

Add the peanut butter sauce to the pan and stir until the peanut butter mixture is thoroughly melted. Then let the mixture simmer for 2 to 3 minutes.

Add the noodles to the pan and stir until well coated.

Serve warm. Enjoy!
