Homemade Item: CORN FLAKE CRUMBS



Do you use corn flake crumbs in your cooking? If not, then you totally should. They are delicious and add a unique texture to your food that you don’t get with bread crumbs. You can easily substitute corn flake crumbs for bread crumbs in a recipe.

You can certainly buy pre-manufactured corn flake crumbs, but why when making them from home is so easy and a heck of a lot cheaper.

Start with an 18 ounce box of corn flakes. Just buy the generic brand, no need to get fancy since you will just be adding them to a recipe. Plus the generic brand is about 2 dollars. Yea cheap!



Pull out your trusty food processor, or if you have a fancy blender that would work too.


Dump in the cornflakes. My food processor is small, so I have to work in batches.


Mix, mix, mix! You only need to blend/process for 5 to 7 seconds. If you blend less, your crumbs will be larger which is fine if you want large crumbs. If you blend more, your crumbs will be finer and start to turn into flour so be careful.

One 18 ounce box of flakes makes about 4 cups of crumbs. Store the crumbs in an air tight container in your pantry.

Rotating Recipe: ORANGE CHICKEN STIR FRY

ROTATING RECIPE:
ORANGE CHICKEN STIR FRY


Here are the Items that you will rotate:
  • ORANGE MARMALADE
  •  SOY SAUCE
  •  SESAME OIL

Here are some of our favorite recipes that use these ingredients:


I love orange chicken. 
I also love a good stir fry. 
This recipe combines the best of both these delicious meals. 
Try it out and let me know what you think!

Makes: 4 Servings
Cook Time: 30 minutes

Ingredients:

1/4 cup butter
1/4 cup orange marmalade
1 teaspoon ginger, either fresh or powdered
2 teaspoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 pound chicken cut into strips
1 tablespoon soy sauce
1 teaspoon sesame oil


Directions:

Heat a large skillet to medium high, and when it is warm add the butter, marmalade, ginger and flour. Mix the ingredients together thoroughly.

When the butter mixture is bubbling, add the chicken and cook for 3 to 4 minutes stirring constantly to make sure the chicken cooks evenly.

Add the remaining ingredients and let the mixture simmer until thickened, about 5 minutes.

If you want to add vegetables, cook them in the microwave for 2 to 3 minutes so they soften, then add them when you add the chicken.

Serve over rice or noodles. Enjoy!

Home Made Item: CROCK POT BABY BACK RIBS

You will not believe how easy ribs can be to make. And you won’t believe how tasty they will turn out!
 
Start by cutting up the ribs into serving size portions, 3 to 4 bones per chunk. Grab your favorite dry rub, here is my home brewed dry rub, Red Rock Rub. Smear your rub all over both sides of the rib chunks.

 
Place the ribs in the pot of a slow cooker standing up so the ribs are vertical. Cook them on low heat for 8 to 10 hours.


You will know the ribs are done when the meat falls off the bones. Remove the ribs from the crockpot and brush with your favorite BBQ sauce. 


These ribs were unbelievable delicious!

Homemade Item: FAJITA SEASONING



Don’t you love spicy fajitas? I’ve tried a few pre-packaged but they just weren’t up to par with what I look for in fajita flavor. So what did I do? I just made my own and I love it! I’m sure you will too.

 
This makes enough for two chicken breasts, but you could easily double, triple, or quadruple the recipe to store some for later.

In a large bowl mix together the following:

CHICKEN BOUILLON

CHILI POWDER

SALT

SUGAR

SMOKED PAPRIKA
 
ONION POWDER

GARLIC POWDER

BLACK PEPPER

CAYENNE PEPPER

CUMIN

Mix it all together and TADA, Home Made Fajita mix.


Fajita Seasoning Mix

Makes: ¼ cup of seasoning, enough for 2 chicken breasts

Ingredients:

2 teaspoons Chicken Bouillon
2 teaspoons Chili Powder
1 teaspoon Salt
1 teaspoon Sugar
1 teaspoon Smoked Paprika
½ teaspoon Onion Powder
½ teaspoon Garlic Powder
½ teaspoon Black Pepper
¼ teaspoon Cayenne Pepper
¼ teaspoon Cumin

Directions:

Mix all the ingredients together in a bowl.

To make Chicken Fajitas, spread the mix over the chicken before cooking.
