MUSHROOMS: Pork Chops with Mushroom Sauce

DINNER RECIPE:
Pork Chops with Mushroom Sauce


This sauce is super quick to whip up but tastes like you spent hours slaving away. I really like the flavor because it is a great mix of the woodsy mushrooms with the tangy mustard.

Serves 4
Cook Time: 30 minutes

Ingredients:

-          4 small pork chops
-          2 cans whole white potatoes
-          2 cans mushrooms
-          ¼ cup butter
-          1 can beef broth
-          2 tablespoons Dijon mustard
-          1 tablespoon dried parsley
-          2 teaspoons oregano
-          1 tablespoon flour
-          Salt and Pepper to taste

Directions:

Heat a large skillet to medium high heat. Salt and pepper both sides of the pork chops. When the skillet is warm, add the butter. When the butter is bubbling add the pork. Cook the pork for 2 to 3 minutes on both sides or until cooked through. Then remove from the skillet but leave the drippings.

Drain the potatoes and put them in a microwave safe bowl. Nuke the potatoes for 3 minutes, stirring halfway through.

Mix the remaining ingredients together then pour into the skillet with the pork drippings. Bring to a bowl and then simmer for 3 to 5 minutes or until the sauce thickens. 

Serve the sauce over the pork chops and potatoes
