 Sweet Sesame Salmon

I love salmon and am always trying out new recipes. The problem with new salmon recipes is that they are very hit or miss. I found this recipe in Real Simple Magazine and just loved it. What is great about this recipe is that my family loved it too.

Serves 4
Cook Time: 45 minutes

Ingredients:

2 tablespoons vegetable oil
4 tablespoons soy sauce
2 tablespoons lemon juice
2 tablespoons brown sugar
2 teaspoons onion powder
1 teaspoon sesame oil
2 teaspoons minced garlic
¼ teaspoon black pepper
2 large salmon fillets

Directions:

In a large Ziploc bag combine all ingredients except the salmon fillets. Shake the bag vigorously to make sure everything is mixed well. Use your fingers to mix through the bag is need be.

Remove 4 tablespoons of the mixture and place in small skillet.

Cut each salmon fillet in half and place in the Ziploc bag. Press as much air out of the bag as possible and let the salmon marinate for 20 to 30 minutes.

15 minutes before the marinade is finished, preheat the broiler on your oven and begin heating the sauce in the skillet to medium low heat.

Place the salmon fillets on a roasting rack and broil for 8 to 10 minutes or until the salmon is flakey. Flip half way through cooking.

Top the salmon with the sauce from the skillet.

LEMON JUICE: Fiesta Salad

Featured Item
LEMON JUICE

Why I store this time:
  • Lemon juice is in a lot of recipes I make and while fresh squeezed juice is mighty tasty, it can become a pain to always have to buy a lemon. I keep a bottle of this in the fridge so I can always have lemon juice on hand when I need it.
  • The commercially prepared stuff does not need to be refrigerated and can last up to 18 months unopened. Once opened it needs to be refrigerated and used within 9 months. However, I've used my open bottle a lot longer than that and it still tasted great. Just make sure it doesn't smell bad or have a funny color.
  • One large bottle lasts me a whole year. I love when I only have to buy something once a year!

Homemade Item: CHIPOLTE RANCH DRESSING

Do you ever have a tiny bit of food left over from a recipe and are not sure what to do with it? You don’t want to through it out, but there is not quite enough to save? Well, try making some fun sauces with it.

I had a little adobo sauce left after a recipe and decided to make chipotle ranch sauce.
