DINNER RECIPE:
Quick and Easy Tortilla Soup


 At our house, we love tortilla chips, but what to do with the crumbs at the bottom of the bag. Well, they are the perfect topping for tortilla soup. The fresh Pico seasons the soup perfectly and requires no chopping beforehand.

Makes: 2 servings
Cook Time: 4 to 6 hours

Ingredients:

1 can chicken broth
1 can water
½ cup fresh Pico de Gallo
¼ teaspoon cumin
1 tablespoon lemon or lime juice
1 chicken breast
Crushed tortilla chips
Shredded Monterey Jack Cheese

Directions:

Mix the first five ingredients together. Salt and pepper the chicken and then place it in a crock pot. Pour the chicken broth mixture over the chicken. 

Cook everything on low for 4 to 6 hours or until the chicken is cooked and tender.

Top the soup with crushed tortilla ships and the shredded cheese.
