CANNED CORN: Bacon Corn Hash

BREAKFAST RECIPE:
Bacon Corn Hash



Who knew you could eat veggies for breakfast? This recipe is delish!! I adapted it from a terrifically tasty blog called Tasty Tiff. Check it out, everything on it is amazing.

Makes: 2 Main Course Servings or 4 Side Dish Servings
Cook Time: 30 minutes
Ingredients:



1 large baking potato
4-6 strips of Bacon
½ cup Corn
1 tablespoon diced Jalapeno
1 tablespoon Parsley
½ teaspoon Pepper
½ teaspoon Garlic Powder
¼ teaspoon Onion Powder

Directions:



Peel and dice the potato into tiny pieces. Place into a pot and cover with water. Bring the water to a boil and boil for 10 minutes then drain the potatoes.


Meanwhile, cook the back in a skillet. When the bacon is done cooking, retain 1 tablespoon of the grease and remove the rest from the skillet. Crumble the bacon and then set aside.

Put the potatoes in the skillet; let them sit for 3 minutes on each side so they become crispy and brown.

Add the corn and jalapeno to the skillet and stir until they are warm, about 3 minutes.

Add the bacon and spices and stir until all is incorporated. Then enjoy!
