Chipotle Pulled Pork


I love this recipe because it uses a slow cooker. I love these types of recipes because I can start them in the morning when I’m feeling ambitious, they often require little hands-on time, and they’re ready for dinner time when I’m tired and have lost my ambition to cook. My family loves the versatility of this recipe because it can be used for salads or pork in tacos. Even better, the leftovers make great quesadillas and enchiladas!

Serves 8 (or more depending on how large your roast is)
Cook Time: 8-10 hours
Ingredients:
3-4 lb pork roast
1 cup chicken broth
1 cup sugar
2 tbsp adobo sauce (add more or less depending on desired spiciness)
1 tsp dry mustard
1 tsp cumin
1 tsp garlic
Directions:
Place pork in slow cooker.
Mix remaining ingredients together in a bowl, then pour over pork.
Let meat cook for 8 to 10 hours.
When meat is finished, put in a bowl and pull the pork apart, then spoon remaining sauce over pork.
Eat it in tacos, salads, or enchiladas.
