REFRIED BEANS: Bean Enchiladas

DINNER RECIPE:
Bean Enchiladas


I love this enchilada recipe because it is warm, gooey, and delicious. Plus you can hide vegetables inside and your picky eaters will never know. I like to add sweet potato puree. This recipe can be made the night before or in the morning, and then all you have to do is pop it in the oven.

Serves 6
Cook Time: 1 hours 30 minutes, includes baking time
Ingredients:

3 medium tortillas cut in half
1 can refried beans
1 can red enchilada sauce
1 ½ cup shredded cheddar cheese
Sour cream

Directions:

Spread some beans over one half tortilla, top with some cheese, roll the tortilla up starting with the short side, place in a baking pan.

Repeat with the remaining tortilla halves.

When all the tortilla bean rolls have been placed in the pan, pour the enchilada sauce over the top until everything has been covered. 

Run a knife around the edges of the pan to make sure the sauce gets around the sides as well.

Bake at 350° for 45 minutes covered, then 15 minutes uncovered.

Top with sour cream.
