ONION SOUP MIX: Sunday Roast and Potatoes

DINNER RECIPE:
Sunday Roast and Potatoes


In my youth, my family always had roast and potatoes on Sunday. To me, roast and potatoes are comfort foods. I know I’m home when I smell the aroma of a roast that has been cooking all day.

Makes: 4
Cook Time: 12 hours
Ingredients:

2-3 pound pork shoulder roast
Salt
Pepper
1 envelope onion soup mix
1 can beef broth
1 tablespoon Parsley
1 ½ teaspoon thyme
3 large Russet potatoes
3 large carrots
1 small onion
¼ of a green pepper
1 tablespoon water


Directions:

Salt and pepper the roast to taste. Place roast in a slow cooker.

Mix the soup mix, broth, parsley, and thyme together then pour over the roast.

Chop the potatoes and carrots into ½ inch pieces. Dice the onion and peppers. Place all the vegetables on top of the roast in the slow cooker.

Cover and cook on low for 10 to 12 hours. 

When the roast, potatoes, and carrots are finished removed them from the slow cooker. Add ½ cup water and 1 tablespoon flour to the drippings in the bottom of the pan. Mix thoroughly and simmer until thickened, 5 to 10 minutes.

Serve the gravy over the roast, potatoes, and carrots.
