This recipe was inspired by a recipe
featured in the latest Food Network
Magazine. My husband is not a big pumpkin fan but thought this recipe was
very tasty and unique. The pumpkin adds a depth of flavor to the alfredo that
is perfect for fall.
Makes: 4 Servings
Cook Time: 20 minutes
Ingredients:
1 tablespoon butter
1 teaspoon olive oil
½ cup canned pumpkin puree
¼ teaspoon ground nutmeg
½ teaspoon diced garlic
1 ½ cup cream
¼ cup parmesan cheese powder
¼ teaspoon black powder
4 cups cooked tortellini
Directions:
In a warm skillet add the butter and olive oil. When the
butter and oil are bubbly add the pumpkin, nutmeg, and garlic.
Stir until the pumpkin is warm and then add the cream. When
the cream starts to bubble, turn the temperature down to low. Let the mixture
simmer for 3 to 4 minutes.
Add the Parmesan powder and stir until smooth. Allow the
sauce to simmer for 3 to 4 minutes or until thickened slightly.
