PUMPKIN PUREE: Pumpkin Oatmeal

WHY STORE THIS ITEM:
  • According to Still Tasty, pumpkin puree can be store 2-5 years unopened, 2-3 months in the freezer and one week in the fridge once opened (don't store in the metal though, move it to a plastic container or bag).
  • Because it is a vegetable, it add lots of nutrients to even sweet things and tastes oh so good!
  • It is a signature fall flavor and you will want it if the zombie apocalypse includes the fall season.


BREAKFAST RECIPE:
Pumpkin Oatmeal


I have fallen into the common fall trap of everything needs to include pumpkin. I am also instantly drawn to anything involving oatmeal - especially steel cut oats. This is the perfect fall breakfast and tastes like a slightly less sweet version of pumpkin pie (if you want it sweeter, add more sugar or syrup!). Original recipe can be found here

Ingredients: 

2 cups steel cut oats (also known as Irish Oatmeal) 
2 cups water
2 cups milk
1 15 oz can pumpkin puree
1/3 cup brown sugar
2 tbsp molasses
2 tsp vanilla
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/3 cup maple syrup
Pecans (optional)

Mix everything except the maple syrup and pecans in a large pot. Bring it to a boil, making sure to stir almost constantly so nothing sticks to the bottom of the pan. Reduce heat and simmer for about 15 minutes - again stirring almost constantly - until an oatmeal like consistency is reached. Remove from the heat, stir in the maple syrup, cover, and let sit for 5 minutes. Top with pecans and enjoy!
