- This cheese does not need to be refrigerated! So it can last on your pantry shelf.
- Having a can of Parmesan cheese on your shelf means you have a quick way to spice up food dishes. Just sprinkle this on top or use it in a variety of sauces. Everyone loves a little cheese on top!
- Parmesan can last unopened for 10 month! That's a long time for stored cheese.

White Truffle Parmesan Fries
For Christmas I got a bottle of White Truffle Oil, it smelled sooo great! The first thing I wanted to
try was white truffle fries, they seem to be all the rage right now. These fries are surprisingly easy
to make but they taste is as if you spent hours preparing them. My husband loved them and can't
wait to eat them again. That's always a good sign, right!

This recipe was adapted from a recipe I found HERE
Makes: 4 to 6 servings
Cook Time 1 hour
Ingredients:
2 large baking potatoes
2 tablespoons plus 1 teaspoon olive oil
1/2 cup parsesean cheese
2 teaspoons white truffle oil
salt and pepper to taste
Directions:
Peel the potatoes and dice them into 1/4 julienne cut. I used a mandoline slicer for this. Place the sliced potatoes in cold water for about 10 minutes. This will help keep the color of the potatoes.
Make sure to dry the potatoes very well after soaking. Toss the potatoes with 2 tablespoons olive oil and then spread on a baking sheet. Salt and pepper the potatoes very well.
Bake at 400 degrees for 40 minutes flipping the potatoes half way through.
Meanwhile, mix the parmesean cheese, white truffle oil, 1 teaspoon olive oil, and more salt and pepper to taste in a large bowl.
When the potatoes are done cooking toss them in the white truffle parmesean mixtures.
Serve fries while still hot.
