Why I like to store these:
  • These canned oranges have such a great flavor! You will enjoy them in both savory meals and desserts!
  • Vitamin C baby! These oranges may be small, but they are not lacking in Vitamin C content with 31 mg per serving. Compare this with a regular orange that has 53 mg.
  • Commercially canned oranges have a shelf live of 18 months. I like how long these last because it means I can buy in bulk and not worry about using them up quickly.

Fruit Salad

About once a year I get a hankering for fruit salad and this is my go to recipe because it
never disappoints. However, it makes a lot! After eating most of this it is no wonder I only want to
eat it once a year. I also love to use this recipe for large family gatherings because everyone loves
fruit salad so it's always a crowd pleaser.
Makes: A lot, I'm not kidding folks!
Cook Time: 30 minutes, plus chilling time

Ingredients:

1 cup uncooked orzo pasta
3.4 oz instant vanilla pudding mix
1/3 cup sour cream
16 oz crushed pineapple
1 large banana
2 teaspoons lemon juice
22 oz canned mandarin oranges
2 cups miniature marshmallows
1 cup sliced peaches
8 oz frozen whipped topping, thawed

Directions:

Cook the orzo pasta according to package directions and then let the pasta cool.

In an extra large bowl combine the pudding mix, sour cream, and pineapple.

Dice the banana and toss it with the lemon juice, this will help keep the bananas from browning. Add the bananas to the bowl.

Roughly chop the oranges and peaches and then add them to the bowl. If you like big fruit chunks you can skip this step.

Add the orzo and marshmallows to the bowl and mix everything together. Make sure everything has a nice coating of the pudding mixture.

Carefully fold in the whipped topping.

Cover the bowl and refrigerate for at least 2 hours or until thoroughly chilled.
